What to order

Gondola is the Sunrise section's Italian dining room — buffet breakfast, buffet lunch, and a proper à la carte dinner menu with pastas, wood-fired pizzas, and seafood. The interior is famously ornate with a stained-glass ceiling that makes it one of the most visually distinctive rooms at Moon Palace. For dinner, go à la carte rather than the buffet line: the squid ink pasta and wood-fired pizzas are the clear standouts, and the chocolate cannoli is consistently called out as a dessert highlight.

• Squid Ink Pasta
  The most distinctive pasta on the menu — briny, dramatic to look at, and the best measure of what the kitchen can do with Italian technique.
• Wood-fired Pizza
  Thin-crust with properly charred base; the Margherita and any seafood-topped version are the ones to order.
• Chocolate Cannoli
  The dessert guests single out by name — crispy shell, rich filling; don't skip it even if you're full.
• Seafood Pasta
  Fresh pasta with shrimp and shellfish in white wine sauce; the lighter alternative when you want Italian without heavy cream.
