What to order

Bistro is the adults-only (16+) Grand Class breakfast and lunch spot — an oceanfront infinity pool terrace with Caribbean views and a made-to-order à la carte menu that blends French technique with Mexican flavors. It's the most tranquil meal on property; arrive at or near the 7am open for the best poolside tables facing the sea. A roving Bloody Mary trolley is the signature brunch touch.

• Huevos en Canasta (Egg in a Basket)
  The insider breakfast pick — egg cooked in a flour tortilla basket; the Mexican-French hybrid that guests most consistently name as a highlight.
• Huevos Divorciados
  Eggs on fried tortillas with contrasting red and green salsas — vibrant, fully satisfying, and the most colorful plate at the table.
• Bacalao and Egg Omelette
  French-style omelette with salted black cod — the wild card preparation and worth ordering if you want something unexpected for breakfast.
• Wild Mushroom Omelette with Red Wine and Veal Sauce
  The most elaborately French item on the menu; the veal sauce omelette is the benchmark for what makes Bistro different from a standard resort breakfast.
