Fuentes Culinary Theatre is the most unique dining experience at El Dorado Royale — a 5-course dinner show with a live chef and sommelier in a 90-foot palapa, each course narrated tableside and projected on four screens with a live acoustic guitarist performing throughout. Three rotating menus through the week, all built around regional Mexican cuisine with wine pairings that begin with a local beer before progressing through wine courses. The $39 entry fee ($10 credited toward wine) is worth it: this is a full theatrical evening, not just a meal. Closed Tuesdays. One sitting nightly at 7 PM — book early in your stay.
